Chavali chi palebhaji in English translates to Green Amaranth and in Hindi is known as Cholai. This green leafy vegetable is also known as Hirva Math (Green Math Bhaji). This is a simple�?Indian stir-fry�?recipe packed with delicious flavours and full of nutrition.
Chavali chi pale bhaji is a Marathi term given to green amaranth vegetable. This is a vegan, diabetic-friendly, beginner & bachelor-friendly nutritious & healthy recipe.

Ingredients required to make chavali chi palebhaji (green amaranth sabzi)
Chavali / Cholai/ Green Amaranth Leaves: I used a big bunch of this green amaranth, which is 2 1/2 cups of chavali leaves.
Onion: I used one big finely chopped onion. Onions enhance the taste of this palebhaji / sabji.
Spices & herbs: I used only a teaspoon of red chilli powder, turmeric powder, hing (asafoetida) along with mustard seeds in this recipe.
Seasonings: I seasoned this chavli chi palebhaji with salt & sugar.
Oil: I used sunflower oil for making this amaranth sabji.
Water: For cooking the vegetable.
How to make Chavali Chi Palebhaji (green amaranth sabzi)
- For making chavli chi palebhaji, we require only the leaves and not the stems. Hence first we will have to remove the leaves from the stems. Discard the stems.
- Wash the leaves in water to get rid of the mud. Let it sit in a colander/strainer for a few minutes to help remove excess water.
- Take a handful of chavali leaves and chop them finely or roughly as per your preference.
- Once we have our chopped chavali ready, let’s start making the bhaji / sabji.
- Heat oil in a pan, add mustard seeds and let them crackle. Once mustard seeds crackle, add hing (asafoetida) and turmeric powder.
- Add finely chopped onions.
- Saute onions for 5 minutes.
- Add the chopped chavali leaves and mix well. Add just 1/4th cup of water to help chavli / green amaranth leaves cook.
- Add salt and cook uncovered for about 5-6 minutes.
- Add sugar and red chilli powder and mix well. Cook for another 5 minutes or till the leaves are cooked perfectly. Keep on stirring in between.
- Our delicious chavali chi palebhaji / green amaranth sabji is ready.
- Serve it with phulka, roti or as a side dish with dal rice.
Note:
I have used red chilli powder in making this vegetable, you can instead add green chillies too.
You can also make this vegetable without onions.
For a gluten-free recipe, avoid hing (asafoetida).
