At home, we like to make this masala omelette for breakfast or as a side dish with meals.

Many a time, I like to wrap the omelette in chapati and make an egg roll for my evening snacks along with some ketchup by the side. This combination is quite filling and tastes delicious.
This desi version of egg omelette with the combination of spices, vegetables, chillies and eggs works best. I personally like to make the omelette slightly crispier around the edges and soft in the middle and stuff in between the toasted bread.
This protein-rich satiating breakfast dish is a treat to kick start your day on a healthy note.
To make this spicy Indian masala omelette I have used vegetables like onions and tomatoes. You can easily add vegetables of your choice here.
Mushrooms, spinach, and bell peppers work best in this egg omelette.

Eggs – I have used 3 eggs here for 2 servings.
Vegetables – I have used onions and tomatoes in this omelette however, you can add vegetables of your choice. Mushrooms, bell peppers, spinach, and carrots work best with the eggs.
Spices & Herbs – Basic Indian spices are used in making this omelette. I have used chicken masala instead of garam masala which imparts a very nice flavour to this omelette.
Seasonings – We will require pepper and salt to season this delicious masala omelette.
Oil – For pan frying the omelette. You can also use butter instead of oil which will enhance the taste of this omelette.

Variations
You can make a cheese masala omelette by adding processed cheese.
For a vegetarian & vegan option, skip eggs and use besan (gram flour) instead.
Serving Suggestions
This masala egg omelette pairs best with soft bread slices. You can also use brown bread slice, toasted bread slice or even with Indian laadi pav.
You can also wrap the omelette in a flatbread like chapati, roti or paratha and eat it as a roll. Makes the best protein-packed evening snack, especially for kids after they return from school or play.
You can also serve this as a side dish with dal rice.

Step-by-Step Indian Masala Omelette
How to Make Spicy Indian Masala Omelette
- In a mixing bowl, break 3 eggs. Add finely chopped onions, green chillies, ginger-garlic paste and tomatoes.
- Add finely chopped coriander leaves.
- Add spices, red chilli powder, turmeric powder, chicken masala powder, black pepper powder and salt.
- Whisk well.
- Heat oil in a pan.
- Take a ladle full of omelette mixture and spread it all over the pan.
- Cook the omelette on a medium flame for about 2-3 minutes.
- Flip and cook it from the other side as well.
- Cook for 1-2 minutes from the other side.
- Spicy Indian Masala Omelette is ready.
- Serve hot with toasted bread and ketchup.
Note:
I have added onion-tomatoes to this omelette, you can add vegetables of your choice or you can totally skip the vegetables and make it by adding only spices and herbs.
Instead of chicken masala, you can add garam masala to this egg batter.
For a vegetarian version, add besan (gram flour) instead of eggs.

Ingredients
- 3 Eggs
- 1 Onion, finely chopped
- 1 Tomato, deseeded
- 1 Green Chilli, finely chopped
- 1 teaspoon Ginger-Garlic Paste
- 2 tablespoons Coriander Leaves, finely chopped
- 1 teaspoon Red Chilli Powder
- 1/2 teaspoon Turmeric Powder
- 1 teaspoon Chicken Masala Powder (OR Garam Masala)
- 1 teaspoon Black Pepper Powder
- Salt to taste
- Oil, to pan fry the omelette
Instructions
- In a mixing bowl, break 3 eggs.
