Egg bhurji is an Indian-style spicy scrambled egg recipe popularly known as Anda Bhurji which is served with pav (Indian bread) for breakfast or as a light meal.

It won’t be wrong if I’d say, that egg bhurji is a staple food of Mumbai.

This is one of the easiest recipes that is nutritious and packed with flavours for any meal of the day.

Egg bhurji comes together in just under 20 minutes and is paired with pav (Indian bread), paratha or roti.

In Mumbai, during the evening time, you will come across many food carts selling bhurji pav where the pav (Indian bread) is toasted with butter and served along with this spicy flavourful egg bhurji.

Bhurji pav is a heavenly combination and is loved by all from elders to kids.

This egg bhurji is quite similar to Parsi dish Akuri. The main difference lies in the texture of these dishes.

Akuri is semi-dry and a little bit on the runny side whereas bhurji is dry but at the same time moist and firm.

You can serve egg bhurji literally for any meal of the day! I often make egg bhurji for breakfast, lunch and dinner.

In case I have some leftover bhurji, I place it between the bread slices and toast them. And there you go, an egg bhurji sandwhich is ready to munch! I love to have it as an evening snack relished with tomato ketchup.

The authentic recipe for making egg bhurji calls for basic veggies that are onion and tomatoes.

At home, I usually make two types of anda bhurji. One is without any spices or herbs and the other with flavourful spices along with ginger & garlic paste.

If you want, you can tweak the egg bhurji recipe and add vegetables such as mushrooms, spinach, and capsicum to enhance the nutritional value of this bhurji.

Apart from serving this egg bhurji with bread or roti, I often like to add millet roti such as raagi roti which makes a perfect healthy meal option, especially for lunch.

This simple egg bhurji is popular across India and made slightly differently depending upon region to region.

For vegetarian option, substitute eggs with paneer (Indian Cottage Cheese), this is popularly known as paneer bhurji and is best paried with roti or phulka.

Serve it hot with pav (Indian bread), tava paratha or chapati.

Note:

While cooking eggs, make sure the flame is medium.

I have used pav bhaji masala here. In case you do not have pav bhaji masala, you may add garam masala or chicken masala. I sometimes even add kitchen king masala.

I personally, break the eggs directly into the base, but you can break the eggs in a bowl add salt and gently whisk them before adding it to the onion tomato masala.

For the vegetarian version, you may substitute eggs with paneer. Just scramble the paneer by hand before adding it to the masala.

  • 2 Eggs
  • 1 Large Onion, finely chopped
  • 1 1/2 Large Tomatoes, finely chopped
  • 2 Green Chillies, finely chopped
  • 1 tablespoon Ginger-Garlic Paste

  • 1 teaspoon Pav Bhaji Masala
  • 1 teaspoon Coriander Powder

  • 2 tablespoons Coriander leaves (Cilantro)

Instructions
 

  • Heat oil & butter in a pan or Kadai. Once hot, add green chillies and finely chopped onions and saute onions for 2-3 minutes.
  • Add ginger-garlic paste and saute onions till they are half cooked.
  • Once the onions are half done, add chopped tomatoes and cook for another 5 minutes or till tomatoes become soft.
  • Once tomatoes are soft, add spices, turmeric powder, red chilli powder, pav bhaji masala and coriander powder. Mix well.
  • Break the eggs into this onion-tomato mixture.
  • Add salt and finely chopped coriander leaves.
  • Once you add the eggs, keep on stirring the eggs continuously until its perfectly cooked.
  • Egg Bhurji is ready.
  • Serve it hot with pav (Indian bread), tava paratha or chapati.
