Rice – For making idli, you can use any short-grain rice or idli rice

Urad Dal – This helps acquire that airy texture to this idli.

Fenugreek Seeds – Helps to ferment the batter and adds a subtle taste to the idli batter.

Seasoning – Salt is added for seasoning.

Oil – Will require just a little amount of oil to de-mould the idlis.

Water – To soak and grind the rice and urad dal.

How to make Idli

  • Soak idli rice along with fenugreek seeds for 5-6 hours.
  • Soak urad dal for 5-6 hours in a separate container.
  • Once soaked, add the urdal dal and blend it to a fine paste use water to make a smooth paste.
  • Urad dal batter is ready.
  • Transfer it to a large mixing bowl.
  • Add the soaked rice along with fenugreek and grind it to a fine paste.
  • Add the rice mixture to the urad dal mixture.
  • Mix both batters.
  • Cover and let the batter ferment for about 8-9 hours. The batter will double in size and rise. Add salt as per taste.
  • Grease the idli moulds with oil and pour the batter into idli moulds.
  • Place the idli mould in the steamer or pressure cooker.
  • Steam the idlis for 15 minutes or till the idli is fully cooked.
  • Idli is ready. Serve with coconut chutney and tangy spicy sambar.

  • 2 cups Idli Rice
  • 1 cup Urad Dal
  • 1/4th teaspoon Fenugreek Seeds
  • Salt as per taste
  • Water for soaking & grinding
