A nutritious & delicious leafy vegetable made with green amaranth leaves also known as chavali in Marathi. This is a vegan, diabetic-friendly recipe that goes well as a side dish with dal rice and can be served with phulka & roti.
Remove the leaves from the stems. Discard the stems.
Wash the leaves in water to get rid of the mud. Let it sit in a colander/strainer for a few minutes to help remove excess water.
Take a handful of chavali leaves and chop them finely or roughly as per your preference.
Once we have our chopped chavali ready, let's start making the bhaji / sabji.
Heat oil in a pan, add mustard seeds and let them crackle. Once mustard seeds crackle, add hing (asafoetida) and turmeric powder. Add finely chopped onions.
Saute onions for 5 minutes.
Add the chopped chavali leaves and mix well. Add just 1/4th cup of water to help chavli / green amaranth leaves cook.
Add salt and cook uncovered for about 5-6 minutes.
Add sugar and red chilli powder and mix well. Cook for another 5 minutes or till the leaves are cooked perfectly. Keep on stirring in between.
Chavali Chi Palebhaji / Green Amaranth Sabzi is ready.
Serve it with phulka, roti or as a side dish with dal rice.
