Ingredients

  • 2 1/2 cups Chavali (Green Amaranth Leaves)
  • 1 big Onion, finely chopped
  • 1 teaspoon Mustard Seeds
  • 1/4th teaspoon Hing (Asafoetida)
  • 1/2 teaspoon Turmeric Powder
  • 1 teaspoon sugar
  • 1 teaspoon Red Chilli Powder
  • Salt to taste
  • 1 tablespoon Oil
  • 1/4th cup Water

Instructions

  • Remove the leaves from the stems. Discard the stems.
  • Wash the leaves in water to get rid of the mud. Let it sit in a colander/strainer for a few minutes to help remove excess water.
  • Take a handful of chavali leaves and chop them finely or roughly as per your preference.
  • Once we have our chopped chavali ready, let's start making the bhaji / sabji.
  • Heat oil in a pan, add mustard seeds and let them crackle. Once mustard seeds crackle, add hing (asafoetida) and turmeric powder. Add finely chopped onions.
  • Saute onions for 5 minutes.
  • Add the chopped chavali leaves and mix well. Add just 1/4th cup of water to help chavli / green amaranth leaves cook.
  • Add salt and cook uncovered for about 5-6 minutes.
  • Add sugar and red chilli powder and mix well. Cook for another 5 minutes or till the leaves are cooked perfectly. Keep on stirring in between.
  • Chavali Chi Palebhaji / Green Amaranth Sabzi is ready.
  • Serve it with phulka, roti or as a side dish with dal rice.
