A delicious Indian breakfast recipe made with scramble eggs infused with spicy flavourful onion-tomato masala and served with butter toasted pav.

- 2 Eggs
- 1 Large Onion, finely chopped
- 1 1/2 Large Tomatoes, finely chopped
- 2 Green Chillies, finely chopped
- 1 tablespoon Ginger-Garlic Paste
- 1/2 teaspoon Turmeric Powder
- 1 teaspoon Red Chilli Powder
- 1 teaspoon Pav Bhaji Masala
- 1 teaspoon Coriander Powder
- Salt to taste
- 2 tablespoons Coriander leaves (Cilantro)
- 1 teaspoon Oil
- 1 teaspoon Butter
Heat oil & butter in a pan or Kadai. Once hot, add green chillies and finely chopped onions and saute onions for 2-3 minutes.
Add ginger-garlic paste and saute onions till they are half cooked.
Once the onions are half done, add chopped tomatoes and cook for another 5 minutes or till tomatoes become soft.
Once tomatoes are soft, add spices, turmeric powder, red chilli powder, pav bhaji masala and coriander powder. Mix well.
Break the eggs into this onion-tomato mixture.
Add salt and finely chopped coriander leaves.
Once you add the eggs, keep on stirring the eggs continuously until its perfectly cooked.
Egg Bhurji is ready.
Serve it hot with pav (Indian bread), tava paratha or chapati.
