Heat 2 tablespoons of oil, add finely chopped onions.
Saute onions for 5 minutes.
Add finely chopped green chillies & ginger-garlic paste.
Saute till the raw flavour from ginger-garlic fades away.
Add finely chopped tomatoes and cook this mixture till tomatoes & onions soften.
Once tomatoes & onions are cooked. Add coriander powder, garam masala powder, turmeric powder, red chilli powder, black pepper powder and salt.
Mix spices with the onion-tomato mixture.
Add 1/4th cup of water to prevent spices from burning.
Cook till oil separates from the masala.
Add eggs one by one. You can break the eggs directly into the mixture.
Sprinkle very little salt and black pepper powder over the eggs.
Add coriander leaves. Cover and cook the eggs for 3 minutes from one side.
Using a spatula, divide the eggs and flip that portion of eggs.
Cook for 1-2 minutes on medium flame.
Easy egg tawa fry is ready.
Garnish with finely chopped coriander.
Serve hot with bread, paratha or as a side dish with meals.
