One-Pot Vegan & Protein-Rich Easy Green Moong Dal Curry

Soak whole green moong dal (green gram) in enough water for 5-6 hours or overnight.

Once soaked, drain the water and rinse the moong dal in water 2-3 times.

Heat oil, add hing (asafoetida), finely chopped ginger and green chillies. 

Add finely chopped onions and saute till translucent.

Onion are transluent.

Add finely chopped tomatoes.

 Cook tomatoes for about 5 minutes.

Add red chilli powder & turmeric powder.

Add coriander powder & garam masala powder.

Add 1/4th cup water and mix the spices with onion and tomatoes.

 Add soaked green moong dal (green gram).

Mix well.

Add 2 cups of water, salt and half a teaspoon of sugar.

 Cover and cook the moong dal.

Once cooked, add fresh coriander leaves. Simmer for another 2 minutes.

For Tadka – Heat oil, add a teaspoon of cumin seeds and garlic.

Add curry leaves, dry red chillies, finely chopped coriander leaves (cilantro).

Pour this tadka on the dal. 

Add coriander leaves.
