Creamy & Delicious Vegan Kaju Curry (Kaju Masala)

Roast half cup of kaju in oil till golden brown.

Heat oil, add sliced onions & cook till translucent.

Add garlic, ginger, kaju, cloves, black pepper corns, and cinamon stick. Saute with onions. 

Add tomato and cook till tomatoes & onion are tender. Cool this mixture .

Once the onion-tomato mixture is cooled. Blend it to a fine paste. 

Our base masala of onion tomato is ready. 

Heat oil, add a bay leaf & peppercorns. Add finely chopped onion & saute. 

Once onions are cooked, add the paste that we made earlier.

Add cumin powder, coriander powder, garam masala powder, red chilli powder, salt & sugar to taste.

Cook the masala till it leaves oil by the edges.

Add 2 cups of water and let the curry come to a boil.

Add the roasted kaju (cashew)

Sprinkle kasuri methi.

Let the curry come to a boil.
