About Masala Macaroni Pasta Indian Style
Masala macaroni is a popular pasta dish with a desi twist made with tubular-shaped pasta. Macaroni is a variety of pasta made from durum wheat. This dry macaroni is used in many recipes like soups, casseroles and salads.
This is a super easy recipe made using simple ingredients.
To make this paste, boiled pasta is tossed with colourful vegetables along with basic Indian spices, some Italian herbs and cheese.
This Indian-style masala pasta has a sweet & tangy taste with perfect textures coming from the assortment of veggies. The recipe comes together in just under 30 minutes with boiled pasta at hand.
I have used very basic vegetables like onions, tomatoes and green capsicum (bell peppers). But you can add any vegetable of your choice like carrots, french beans, broccoli, green peas, baby corn etc.
Along with vegetables, for this Indian fusion recipe, we will also use garlic, green chilles, and Indian species along with tomato ketchup & cheese.
This chatpata macaroni pasta makes a perfect tiffing option for a kid’s school tiffin box as well as an office lunch box.
To make this pasta, you can use any kind of pasta if you do not like macaroni or if you can’t get one. Pasta such as fusilli, penne, and shell go very well in making this dish.
At home, we like to include it for light dinner, lunch and evening snacks along with some garlic bread made from Indian laadi pav (bread loaf).
The best thing about making this pasta is that we do not have to make any red or white sauce. Everything goes into one single pot.

Pasta – To make this masala macaroni, I have used 250 grams of macaroni pasta which I boiled in water by adding salt.
Cheese – I have used processed cheese here, you can use cheddar or mozeralla.
Garlic & Chillies – We will also need basic herbs like finely chopped garlic along with some green chillies for that heat. If making for children, you can skip adding the green chilles.
Vegetables – I personally prefer using onions, tomatoes & bell peppers only. But you can add other vegetables too like carrots, french beans, green peas, broccoli, and baby corn.
Spices – We will add red chilli powder, turmeric powder & coriander powder. You can also add garam masala powder if you like.
Seasonings – Though it is an Indian-style masala pasta, we will add some Italian pasta seasoning. You can also add red chilli flakes instead of red chilli powder.
Oil / Butter: This pasta tastes delicious when made using butter. But at home, we prefer using oil. I have used sunflower oil, you can also use olive oil for this which imparts a very distinct taste to this pasta.

How to make Masala Macaroni Pasta Indian Style
- In a big vessel add 5 cups water and 1 teaspoon of salt. Bring this water to a boil.
- Add 200 grams of macaroni pasta (use any pasta of your choice). Cook Pasta for 5-6 minutes.
- Do not overcook the pasta.
- Once cooked, drain the water and remove the pasta in a bowl or plate. Keep half a cup of pasta water aside for later.
- Drizzle a teaspoon of oil over the pasta. This helps pasta not stick to each other.
Let’s make masala macaroni pasta
- In a saucepan heat oil, add chopped garlic and green chillies, saute for a minute.
- Add finely chopped onions and saute till translucent.
- Add roughly chopped capsicum (bell Peppers), and saute for 2 minutes.
- Add finely chopped tomatoes. Mix all the vegetables together.
- Cover and cook the vegetables till the tomatoes soften.
- Add red chilli powder and turmeric powder.
- Add 4 tablespoons of tomato ketchup and 1 teaspoon of red chilli sauce.
- Mix the sauce with vegetables.
- Add mixed Italian herbs, black pepper powder & sugar. Here sugar is used to balance the tartness of the tomatoes. Adding black pepper powder is optional.
- Mix and cook this masala for about 2 minutes.
- Add the cooked macaroni pasta.
- Mix pasta with the masala.
- Add 1/2 cup of pasta water and salt to taste.
- Cover & cook for 2 minutes.
- Add grated cheese. I have used amul processed cheese.
- Lastly, add finely chopped coriander leaves.
- Spicy, tangy macaroni masala pasta Indian style is ready to serve.
- Garnish with some grated cheese before serving. Serve hot with garlic bread.
Note:
If making it for kids, skip adding green chillies and black pepper powder.
I have used basic vegetables in making this pasta but you can add any vegetables of your choice.
